What do you know about caramel color? I thought this was a no-no so I've been avoiding coca cola, root beer because they have caramel coloring. Thoughts

Dear Peter I am a coiliac sufferer, can you tell me if I can have preservatives and emulsepheres. Can I also eat marmite thankyou

Re: What you can eat on a gluten-free diet  Posted by Peter
Preservatives are mostly things like vinegar, or other acids, that stop bacteria growing in food. They would not contain gluten.
Emulsifiers break fat up into small globules. Again they will not contain gluten.

Marmite is gluten free.
On one CD website it says Marmite is not suitable for a gluten free diet.
This is not true.
There is no gluten in Marmite.
See here.

Are there any types of bread which can be eaten or is it only the special gluten/wheat free you see in the organics dept of the supermarket (very expensive!)? What about branded rice crispies/mixed nuts/raisins/dried fruit as a made-up cereal

Look at the recipes in the book.
There is a very wide range of gluten-free bread you can eat.

Don't eat anything with wheat, barley rye or oats in them. This excludes most
pre-prepared mixes, soups, sauces and many lunch meats. Read ingrediants
on all labels. Gluten is usually hidden in the ingrediant list as modified food
starch, malt, carmel or even vegetable protein. If the modified food starch is
identified as rice, corn, potatoe or tapioca it is OK. If it doesn't say, don't take
a chance. Make sure you check labels that have been gluten-free in the past
as the ingrediants may be changed. The manufactuer will use the cheapest
grain he can get to thicken his product. I have mistakenly drank fruit juices that
have modified food starch in them---who would think they would put it in juice?
Most candies have a gluten of some sort READ, READ, READ all labels every
time for your own health.
Many people who are gluten intolerant are also lactose intolerant. I went off
both when starting gluten-free, but I can not drink milk or use cream. I tried to go back on them after many months of being gluten-free. I am able to eat yogurt and
lactose free milk at this time and also cheese.
When I first started gluten free I fixed plain meat potatoes and a vegetable.
It was really no problem and my husband was over joyed. It was the simplest
way for me to begin.
There's one more thing that was extremely difficult for me. I was depressed
because of all the things I would never eat again. If it starts to alter your life too
much and you find that you are always feeling sorry for yourself you should ask
your MD for an antidepressant. I think we all go through a real morning process
by what we feel we have lost. --- I feel wonderful now!!!!! I"m 5 feet 2inches
and I was down to 83 lbs. I now weight 110 and look human again. Stick with
it after awhile you won't miss gluten---it just makes you sick. There are
thousands of wonderful things to eat that I would never tried if it weren't for CD

Most fizzy drinks and squashes are gluten-free but beware of cloudy ones such as cloudy lemonade which contain barley or barley flour - these are not gluten-free.

Plain Tea and coffee are gluten-free but note that some vending machines drinks are not gluten-free.

Cider, wine, spirits are gluten-free.

Beer, lager, ales are not gluten-free unless they specifically say so on the bottle.

Re Caramel - What you can eat on a gluten-free diet  Posted by Peter
caramel is gluten free.

The ingredients or raw materials which may be used in the preparation of caramel color in the United States are listed in the Standard of Identity for Caramel (CFR 21, 73.85). The edible carbohydrates are glucose, invert sugar, malt syrup, molasses, sucrose and starch hydrolysates and fractions thereof. Corn starch hydrolysate, that is, corn syrup of high dextrose equivalent is employed most frequently by the caramel color industry.

Whisky is gluten-free because it has been distilled.
Beers and Stouts are not gluten-free unless they have been specially brewed.
