Ingredients: to serve four
4 oz / 100g pudding rice
2 oz / 50g sugar
1 ¼pint / 700 ml milk
1 oz / 25g butter
1 drop vanilla essence
salt to taste
9 oz / 250g cooking apple
Wash the rice and then boil in a pint of water for 5 minutes, leave to stand for 10 minutes.
Beat together the sugar, milk and butter with a drop of vanilla essence.
Drain the rice and add the rice to the beaten mixture.
Place in a flame proof and ovenproof bowl and bring quickly to the boil on a high heat.
Place the bowl in a preheated oven
gas mark 4 350°F 180°C
for 30 minutes.
Beat the eggs.
Remove the rice from the oven and mix in the three eggs.
Put layers of cooked rice and cooked apple in an oven proof-dish and return to the oven until the top is brown.
Many other fruits can be served with rice in this way.
