Hummus : Glutenfree


Ingredients: Hummus : Glutenfree

Ingredients: to serve four

8 oz / 225g chick peas

1 pint / 550ml water

3 lemons

5 garlic cloves

1 tsp / 5g salt

6 oz / 150g sesame seed

2 tablespoons 40 ml olive oil

paprika to taste


Instructions: Hummus : Glutenfree


Soak the chick peas overnight in a pint / 550ml of water. Drain and wash the peas.

Place the chick peas in a pint of fresh water and boil gently for 2 hours or until tender.

Drain the peas.

Place the sesame seed, garlic, olive oil, and half the lemon juice in a blender and reduce to a smooth pureé.

Add the cooked chick peas a few at a time to the mixture in the blender together with the remaining lemon juice and reduce to a smooth pureé.

Add a small amount of paprika to produce a spicy taste if required.

Serving suggestions:

Serve with thin buckwheat pancakes.
